Recipe for Cauliflower Wings with Curry Tomato Dip

Ingredients

Cauliflower Marinade

  • 100ml almond milk
  • 1 tbsp mustard
  • 2 tbsp coconut oil
  • 2 tbsp tomato paste
  • 4 tbsp teriyaki sauce
  • 4 tbsp maple syrup
  • 1 tsp paprika powder, curry, cumin & salt
  • 1 head cauliflower, in small florets
  • 60g almonds, slivered

Curry Tomato Dip

  • 80g tomato paste
  • 100ml strained tomatoes
  • 60g applesauce
  • ½ tsp curry, cumin, salt & pepper

Preparation

  1. Mix the ingredients for the marinade and marinate the cauliflower florets in it for 20 minutes.
  2. Bake the cauliflower on a baking sheet for 35-40 minutes at 180°C.
  3. After 20 minutes of baking time, turn the cauliflower florets and sprinkle with slivered almonds.
  4. For the curry tomato dip, mix all ingredients, simmer over low heat for 10 minutes and chill.
  5. Enjoy the cauliflower warm, preferably immediately, with the cool curry tomato dip.
