Doesn't everyone have their "signature dressing"? If not, try this one. This tomato explosion not only goes well with vegetables, but is also the perfect dressing/sauce base for pasta salads. Very simple, very quick & very, very delicious!

Recipe for Vegetable Bowl with Curry Coconut Dressing

Ingredients

Dressing

  • ½ glass of sun-dried tomatoes
  • 2 tbsp coconut oil, melted
  • 2 tbsp canned coconut milk
  • 2 tbsp curry ketchup
  • 2 tsp sriracha sauce
  • Spices: salt, pepper, curry, Ras El Hanout, fresh basil & fresh coriander

Vegetable Bowl

  • Broccolini
  • Green beans
  • Tomatoes
  • Sun-dried tomatoes
  • Pumpkin seeds

Preparation

  1. Put the ingredients for the dressing into a blender and blend until a slightly thicker dressing-like consistency is achieved (if you prefer it more liquid, add more coconut oil).
  2. For the vegetable bowl, cook the broccolini and green beans until al dente and place in a bowl with the fresh tomatoes, sun-dried tomatoes & pumpkin seeds.
  3. Finally, mix the dressing with the vegetables.
  4. The dressing can be easily prepared in advance and is also the perfect dressing/sauce base for pasta salads.
