Low-carb can be so easy and delicious. This light salad is wonderfully zesty thanks to the lemon and is perfect for warm summer days. It pairs perfectly with a delicious omelet, feta, or a piece of chicken breast.

Recipe for Green Bean Bowl with Pine Nuts

Ingredients

Vegetable Bowl

  • 250g green beans
  • 100g mushrooms, sliced
  • 1 jar sun-dried tomatoes + liquid
  • 2 tbsp olive oil
  • Splash of lemon juice
  • Nutmeg
  • Salt
  • Pepper

Topping

  • 20g pine nuts

Preparation

  1. Sauté green beans and mushrooms in a pan with a little oil until al dente.
  2. Reserve the liquid from the sun-dried tomatoes, dice the tomatoes, and stir them into the vegetables along with the reserved liquid.
  3. Finally, season the vegetables with olive oil, lemon, nutmeg, salt, and pepper & top with pine nuts.
  4. It pairs best with warm turmeric-lemon feta, fresh from the oven.
