Eating raw cookie dough – that's usually a big no-no on a ketogenic diet. But this recipe is something special. Delicious hazelnut cookie dough with cocoa nibs and even more crunchy nuts on top! With only a few net carbs per serving, these Cookie Dough Truffles are sugar-free, low-carb, and ketogenic at the same time!

Recipe for Hazelnut Cookie Dough Truffles

Ingredients

Cookie Dough

  • 40g almond flour
  • 40g ground hazelnuts
  • 15g vanilla protein powder
  • 10g cocoa nibs
  • 25g hazelnut butter
  • 20g Erythritol
  • 40g cream cheese
  • 1 pinch ground tonka bean
  • A dash of milk

Toppings

  • 20g cocoa powder
  • 20g almond slivers

Instructions

  1. Mix the ingredients for the dough until it has a cookie dough-like consistency (add a little more milk if necessary).
  2. The dough should be crumbly and moldable, but no longer sticky.
  3. Line a mold with parchment paper and press the dough firmly into it.
  4. Freeze for 30 minutes until firm.
  5. Then cut into squares, roll in cocoa powder, and decorate with almond slivers.
