Recipe for Salmon Parcels

Ingredients (2 servings):

  • 300g carrots
  • 250g zucchini
  • 2 pieces of salmon fillet
  • 1 tbsp lemon juice
  • ½ tsp garlic pepper
  • Pinch of crystal salt
  • 1 tsp dill
  • 1 tbsp olive oil

Preparation:

  1. Peel carrots and cut into sticks, halve zucchini and slice.
  2. Place 2 sheets of baking paper on top of each other and tie the ends together.
  3. Heat some olive oil in a pan and sauté the carrots for 5 minutes. Add the zucchini, garlic pepper and crystal salt and sauté for another 2 minutes. Now fill into the middle of the baking paper.
  4. Briefly sear the salmon on all sides and place on the vegetables. Drizzle with lemon juice, sprinkle dill over the salmon and finally add 1 tbsp olive oil. Now fold the sides of the baking paper over to form a closed parcel.
  5. Bake in the oven at 180° top/bottom heat for 15 minutes.
