Mediterranean salad with pesto, arugula, and lots of fresh vegetables. The salad can sit for a while, making it perfect for preparing in advance. If you need a carb source, simply enhance the salad with some pasta or Ebly. It suits any occasion and always tastes wonderfully fresh, Italian, and summery.

Recipe for Warm Vegetable Pesto Salad

Ingredients

Vegetables

  • Zucchini, eggplant, bell pepper, tomatoes & shallots (diced)

Sauce

  • 1 jar of pesto
  • 100g tomato paste
  • 2 tbsp ketchup
  • 1 tsp honey
  • Dash of balsamic vinegar
  • Salt, pepper, basil

Toppings

  • Arugula salad
  • Pine nuts
  • Pesto

Preparation

  1. Sauté the shallots in a little oil, add the vegetables, deglaze with a little water, and simmer for 5 minutes.
  2. Add the sauce ingredients to the vegetables and simmer for another 5 minutes.
  3. Mix the vegetables with the arugula salad and top with pine nuts and pesto.
  4. The salad can be perfectly prepared in advance and will keep for several days in the refrigerator.
