These fine Stollen bites with walnuts and apples are very easy to make and perfect for snacking. The apple makes them delightfully fruity and keeps them moist for a long time. Bake a delicious Low Carb Stollen for yourself and your loved ones this Christmas season.
Recipe for Low Carb Apple and Walnut Stollen Bites
Ingredients:
Dough
- 120g almond flour
- 80g ground almonds
- 80g erythritol
- 100g almond butter, light
- 1 organic egg
- 100g cream cheese
- 2 tsp stollen spice blend
- 8g cream of tartar baking powder
- 1 pinch salt
- 60g walnuts, chopped
- 100g apple, diced into small pieces
For brushing
- 40g melted butter
- 20g erythritol, ground to powder
- ½ tsp Bourbon vanilla, ground
Topping
- 20g erythritol, ground to powder
Preparation:
- Mix the ingredients for the dough, then knead in the walnuts and apples.
- Divide the finished dough into small portions and shape them into small stollen.
- Place the stollen bites with some space between them on a baking sheet lined with parchment paper and bake in the oven at 175°C for 15-18 minutes (cover with aluminum foil halfway through the baking time).
- As soon as the stollen bites are ready, brush them with the butter-erythritol-vanilla mix and roll them in powdered erythritol.
Tip:
If you like, you can also make your own sugar-free marzipan and incorporate it into the dough. Simply make a marzipan raw mass from 80g ground almonds, 40g powdered erythritol, 2 drops of bitter almond oil, and a little rose water.
