Small cookie dough pralines with a light gingerbread note, intense nut crunch, and crisp dark chocolate. They are perfect for preparing in advance and suit any occasion.

Recipe for Low Carb Gingerbread Chocolate Cookie Dough Pralines

Ingredients:

Cookie Dough

  • 100g almond flour
  • 80g ground hazelnuts
  • 20g almonds, chopped
  • 20g hazelnuts, chopped
  • 40g erythritol, ground to powder
  • 50g almond cream or almond butter
  • 20g butter
  • A dash of milk
  • ½ tsp gingerbread spice

Chocolate Topping

  • 60g dark chocolate
  • 10ml coconut oil

Preparation:

  1. Knead the ingredients for the cookie dough into a slightly crumbly dough (if the dough is too crumbly, add a little more milk) and form into 8-10 balls.
  2. Melt the chocolate over a bain-marie and add coconut oil.
  3. Dip the cookie dough pralines in the chocolate or drizzle the chocolate over the pralines. Place on baking paper and chill.
  4. After a short break in the refrigerator, the pralines become truly fudgy and doughy and still taste heavenly after 3-4 days (well-chilled).
