Traditionally, Shakshuka is a dish from Asian cuisine, primarily characterized by its tomato sauce. In this super green version, you definitely won't miss tomatoes, as the feta dip combined with fresh vegetables, poached eggs, and aromatic broth simply harmonize perfectly.

Recipe for Spicy Green Shakshuka with Feta Dip

Ingredients

Shakshuka

  • 2 eggs
  • 400g green vegetables (e.g., broccoli, creamed spinach, peas, green bell pepper)
  • 100ml water
  • 2 tbsp olive oil
  • 2 tsp vegetable broth
  • 1 tsp GreatVita Herb Butter Seasoning

Feta Dip

  • 100g feta, crumbled
  • 50g Greek yogurt 10%
  • 50g sour cream
  • 1 tsp mustard
  • Salt, cayenne pepper, ground cumin

Preparation

  1. Stir water, olive oil, vegetable broth, and spices in a pan, add vegetables & cook until al dente.
  2. Using a spoon, form 2 wells in the vegetables and crack 1 egg into each well.
  3. Poach the eggs in the vegetables over low heat with a closed lid until the egg whites are set (the yolk should still be liquid or soft).
  4. In the meantime, mix the ingredients for the feta dip into a cream.
  5. Remove Shakshuka from the heat and enjoy warm with the feta dip.
