Perfect meal prep for breakfast or an afternoon snack. In just 10 minutes, this fruity banana bread with blueberries goes into the oven and stays moist and fresh for up to 4-5 days. The bananas make the bread wonderfully moist and it contains no traditional sugar.

Recipe for Blueberry Coconut Banana Bread

Ingredients:

Dough

  • 100g spelt flour
  • 20g coconut flour
  • 40g ground almonds
  • 45g coconut blossom sugar
  • 50g light almond butter
  • 25ml coconut oil
  • 1 organic egg
  • 250g mashed banana
  • ¼ tsp ground tonka bean
  • 1 tsp cream of tartar baking powder
  • Pinch of salt
  • 125g blueberries, frozen

Topping

  • 40g desiccated coconut

Preparation

  1. Mix the ingredients for the dough and carefully fold in the blueberries.
  2. Pour the dough into a greased tin and sprinkle with desiccated coconut.
  3. Bake for 40-45 minutes at 180°C.
  4. We recommend placing the bread in the refrigerator overnight, as it will become much firmer and juicier.
