This recipe is especially suitable for those who LOVE fresh, crunchy, and seasonal vegetables. Sometimes you don't need many ingredients to conjure up a delicious lunch dish. Especially with flavorful vegetables, like beetroot and carrots, a subtle refinement is enough.
Recipe for Vegetable Patch with Nut Crunch
Ingredients:
Salad
- 80g lamb's lettuce
- 1 large beetroot
- 2 carrots
- 1 mini cucumber
Dressing
- 2 tbsp dark balsamic vinegar
- 2 tbsp linseed oil
- 1 tsp tomato paste
- 2 tsp erythritol/honey
- Herb mix, finely chopped or dried
- Salt, pepper
Topping
- 20g hazelnuts
- 20g almonds, salted
- 20g pumpkin seeds
Preparation
- Wash salad ingredients and cut into desired large pieces
- Add dressing ingredients to a sealable container and shake vigorously
- Mix salad with dressing and top with nuts

Roast the nuts/seeds beforehand to give the whole dish a nutty flavor and extra crunch. Perfect for meal prepping. The salad pairs perfectly with a fresh pretzel.
