Perfect for your lunch break: coconut quinoa with zucchini curry, bell pepper, lamb's lettuce, and roasted pumpkin seeds. The recipe doesn't require too many ingredients and is easy to prepare the evening before. If you like, prepare a little more zucchini curry and use the rest of the sauce as a dressing for the salad.

Recipe for Coconut Quinoa with Zucchini Curry in a Jar

Ingredients:

Quinoa

  • 125g quinoa
  • Pinch of salt
  • 25ml coconut oil
  • Zucchini Curry
  • 150g zucchini, diced
  • 20g tahini
  • 10g olive oil
  • 100ml canned coconut milk
  • 2 tsp honey
  • Spices: salt, pepper, curry

Toppings

  • 100g bell pepper, diced
  • Lamb's lettuce
  • 20g pumpkin seeds

Preparation

  1. Prepare the quinoa according to package instructions.
  2. Once the quinoa is ready, fluff it with a pinch of salt and coconut oil and transfer it to a meal prep-suitable container.
  3. In a pan, briefly sauté the zucchini cubes with olive oil, then let them simmer with the remaining ingredients for 8-10 minutes over low heat.
  4. Top the quinoa with zucchini curry, bell pepper, lamb's lettuce, and pumpkin seeds.

Tip

The recipe is for one serving, but it can easily be prepared in larger quantities for several days as meal prep.
